Appetizing pie with pumpkin and meat. Pumpkin season continues

Dad is coming tomorrow! On vacation. For 35 whole days, our family will again be a normal family, consisting of mom-dad-son. I don’t remember if I mentioned here on the blog that for almost a year now my husband and I have been forced to live in different cities. Not only that ... downright in different parts of the geography (((Recently, in one of the social networks, I accidentally stumbled upon the statement that the military are free people, wherever they are sent, they want to go there. So this is written off directly from us. But , 10 months behind and ... dad is coming to us!))))))
On this occasion, pies were started today. With meat, of course. And what else should I feed my husband?))))) Well, okay ... okay ... today's pies with chicken)))))) But not with apples!))
In continuation of the pumpkin theme that reigns in all culinary and near-culinary blogs, I decided to make one of the pies with pumpkin.

And so, back to our ram pies.

Usually for these pies, I use ready-made puff-yeast dough, which is prepared at our local mini-bakery nearby. For two pies, a kilogram package is exactly enough.
I usually prepare the filling in two cups at once. You can see a step-by-step master class on making my "signature" pies.
Today I cooked one pie with chicken, leek and pumpkin:

And the second pie with chicken, leeks and potatoes. A piece of boiled sausage lying around in the refrigerator also went into action. And absolutely did not spoil the taste of the filling.

I usually bake oval pies. Such overgrown pies))) Then it’s very convenient for me to shift them into oval dishes.

In our family, pies stuffed with pumpkin and meat are prepared and eaten with pleasure. How good is this pie?

The filling for it can be prepared in any proportions, add more pumpkin or more meat, as you like. I decided to cook the Asian version. This means that only raw foods are put inside, nothing is pre-fried or stewed. The cake turns out very juicy, and the cooking time is also saved.

To prepare a pie with pumpkin and meat, take all the products on the list.

In a convenient container, combine water, salt and vegetable oil.

Add flour and knead soft dough. The dough is perfectly kneaded and does not stick to hands at all, due to the presence of oil in its composition. The consistency of the dough is similar to yeast, just as soft and pliable. Don't beat him up with flour. Cover the dough with foil and set aside.

For the filling, mix finely chopped onion, pumpkin and minced meat. I don’t advise grating the pumpkin, it’s better to use a combine and still chop it finely. I always cut it by hand. In the filling, the pumpkin should cook, but not turn into a puree. Add salt, pepper and zira, mix well the resulting filling.

Divide the dough into 2 equal parts. Roll out each piece thinly to the shape of your baking sheet. I have it - 38 by 27 cm in size along the outer edge. Lay one sheet of dough on a baking sheet, slightly wrapping the edges.

Lay out all the stuffing.

Cover with the second layer of dough. Carefully close up the edges, tucking them in and forming figured tucks. Poke a few holes in the pie for steam to escape.

Lubricate the cake with sour cream and bake over medium heat (180-190 degrees) for about 35-40 minutes. During baking, open the oven a couple of times and spray the walls of the oven with water from a spray bottle.

The pie with pumpkin and minced meat should be well browned, and the filling inside should be cooked. It is not recommended to get the cake earlier than 35 minutes. You can cook it longer, up to an hour, depending on the properties of your oven. If there is any doubt about the readiness of the filling, you can pick the dough in the middle and check. Sprinkle the finished cake with water over the entire surface and cover with a towel. Leave for 10-15 minutes alone, during which time the dough will steam out and become soft.

  • 240 gr flour
  • 190 ml water
  • 60 ml vegetable oil
  • 1 teaspoon salt

For filling

  • 300 gr pumpkin
  • 200 gr minced meat
  • 2 onions
  • salt and allspice to taste
  • a pinch of zira

  • sour cream for greasing the cake

Starting the process

  1. First of all, we take a separate container and combine water, salt and vegetable oil in it. Then add flour and knead a soft dough. Wrap in cling film and leave for a while.
  2. We are preparing the stuffing. Finely chop the onion and pumpkin. Combine these prepared ingredients with minced meat. Then salt, pepper and add cumin. We mix everything well.
  3. After the required time has elapsed, we divide our prepared dough into two parts. We roll each of them into a layer, the size of a baking sheet, on which the pie will be baked. And do not forget to put baking paper. On top of it we put the first rolled layer. We wrap a little edge. After that, lay out the entire filling and cover with a second layer of dough. Then you need to close up the edges well. We make several holes in the cake and grease the surface with sour cream.
  4. Preheat the oven to 180 degrees and send a baking sheet there for 40 minutes. During baking, you need to open the oven several times and sprinkle water from a spray bottle on its walls.
  5. After the required time has elapsed, we take out the finished cake and also sprinkle it with water. Leave for 10-15 minutes and serve.
