Step 1: prepare the flour.

To make our pancakes from a delicate airy dough, it is necessary to sift the flour in advance. This process allows it to be saturated with oxygen and get rid of excess lumps. To do this, simply pour the flour into a sieve and do an important action right over the middle bowl. Attention: This component may need either more or less. It all depends on the quality of the flour and its brand. For example, I usually use Amina, and she tends to swell after 20–30 minutes. Therefore, when we prepare the dough for pancakes, be sure to follow the whole process so as not to overdo it with flour. Otherwise, the pancakes will either tear or get very thick.

Step 2: prepare the milk.


Pour milk into a small saucepan and place over medium heat. Literally in 2 minutes turn off the burner, and pour the liquid component into a large bowl. Attention: to prepare the dough, we need warm milk (the temperature should be no more than 35–37 °С otherwise the egg may curdle).

Step 3: Prepare the Pancake Dough.


Using a knife, break the egg shell, and pour the yolk with protein into a bowl with warm milk. Add a pinch of salt to this and, using a hand whisk, beat everything thoroughly until smooth. Next, we begin to introduce small portions of the sifted flour. At the same time, we do not stop mixing everything with improvised equipment so that lumps do not form. At the end, we leave the dough aside so that it can brew a little. Somewhere through 20–30 minutes Let's see how thick it is. If the dough is the consistency of pancakes, then be sure to lightly dilute it with milk or clean water. If the opposite, then add a couple of tablespoons of flour. Ideally, it should be liquid. In any case, we try to do everything by eye. At the end, pour vegetable oil into a bowl ( 5-7 tablespoons) so that during frying the pancakes do not stick to the surface of the pan, and mix everything well again.

Step 4: fry the pancakes.


We put the pan on a large fire and let it heat up well. Immediately after that, we fasten the burner and pour a little vegetable oil here (but this is only for the first pancake). We are again waiting for the contents of the container to warm up well. Now, with the help of a ladle, we collect a little batter and pour it into the pan. Attention: to make the pancake beautiful and without holes, be sure to turn the container from side to side. So the dough spreads better over the entire surface and we get an even circle. Fry the pancake on both sides 1–2 minutes. The readiness of the dish can be checked by the golden edge.

Next, using a wooden spatula, move the pancake to a flat plate, and instead pour the next portion of the dough. At the end, turn off the burner and proceed to the preparation of the filling.

Step 5: prepare lightly salted salmon fillet.


We spread the salmon fillet on a cutting board and, slightly prying the skin with the tip of a knife, separate it from the pulp. Now cut the fish into thin strips and transfer to a clean plate.

Step 6: prepare hard cheese.


We spread the hard cheese on a cutting board and, using a knife, carefully cut into thin slices. We move the crushed component to a free plate and leave it aside for a while.

Step 7: prepare the dill.


We wash the dill well under running water, shake off excess liquid and put it on a cutting board. Using a knife, finely chop the greens and pour into a free saucer.

Step 8: Preparing the Cucumber



We wash the cucumber under running water, wipe it with kitchen paper towels and put it on a cutting board. We remove the edges with a knife and then cut into either thin strips or almost transparent circles. Transfer the chopped vegetables to a clean plate.

Step 9: Prepare Stuffed Pancake Rolls.


Place the pancakes one at a time on a clean, dry cutting board and lightly grease with mayonnaise, and sprinkle with salt and freshly ground black pepper to taste. Next, sprinkle with a small amount of chopped herbs and place a couple of slices of hard cheese in the center. We lay out slices of salmon on top, and across them are several strips or circles of cucumber. We tightly wrap the filling with a roll so that the pancake does not tear, and move the dish to a special plate for serving. When everything is ready, wrap the container with cling film and put it in the refrigerator. for 2-3 hours. Let the rolls soak in the ingredients of the filling. In addition, when they cool, they will be easier to cut into portions.

After the allotted time, we take the dish out of the refrigerator and free it from the cling film. Using a knife, cut the rolls across into slices about 3-4 centimeters and transfer to a nice serving plate.

Step 10: serve pancake rolls with stuffing.


Rolls of pancakes are recommended to be served immediately to the festive table after cooking. By the way, in this recipe, I took lightly salted salmon, hard cheese and herbs as a filling, but in general, various sweet and salty ingredients can be put inside the dish.


For example, it can be Philadelphia cheese mixed with chopped red fish, cottage cheese seasoned with mayonnaise, chopped garlic and canned capers, and many other equally tasty toppings. Usually I cook such a dish for the holidays and all kinds of buffets.   • 2 eggs

  • a pinch of pepper.

Cooking pancakes:

  1. We beat the eggs.
  2. Add warm milk to eggs and mix.
  3. Add flour in small portions, mix. With one of the servings of flour, you need to add a third of a teaspoon of soda.
  4. When the mass becomes homogeneous, add sugar, salt.
  5. Add sunflower oil, thanks to it you can not add oil to the pan, or grease the pan with a small amount of fat before baking.

We bake pancakes until they are browned, after they are cooked, cover the pancake stack with a lid from the cake maker, each cake can be smeared with oil using a silicone brush or spatula.

Cooking roll of pancakes with liver filling:

  1. We cook the liver, grind it in a meat grinder in an already boiled form.
  2. Finely chop the boiled eggs, you can cube, or you can grate on a coarse grater.
  3. Fry finely chopped onion.
  4. When the onion becomes golden in color, add carrots grated on a coarse grater to it, then keep on fire for a few more minutes (two to three minutes).
  5. Add the liver to the onions and carrots, fry, but do not overcook, so that the filling does not dry out, but remains juicy.
  6. Mix the liver filling with grated eggs.

We wrap the filling in pancakes and put in the refrigerator overnight. To make them denser, they can be squeezed a little by wrapping them with cling film. Pancakes need to be cut, arranged on a plate in columns and served, decorating with greens on top. Rolls can be heated in the microwave, fried, baked, but just from the refrigerator they are very tasty and quite suitable for a festive table.

with ham

  • 300 grams of ham
  • 200 grams of hard cheese
  • some dill
  • a jar of mayonnaise (preferably homemade)

Pancakes are prepared in the same way as in the previous recipe.

Cooking pancake roll with ham filling:

  1. We rub the cheese (you can use a small one, but it is enough to grate on a coarse grater).
  2. Finely chop the ham into cubes or thin strips.
  3. We chop the dill.
  4. We cover the pancakes with a thin layer of mayonnaise, distribute the greens, spread the ham, add a little grated cheese on top, wrap it in a roll and cut it.

If you want to serve it cold, you can just keep the dish in the refrigerator for an hour, or you can serve it warm, reheat it in the microwave or in a pan, then the cheese will melt and the dish will get a special cheese flavor. Only warmed up they need to be eaten quickly - after all, dishes with mayonnaise quickly deteriorate.

Mushroom

  • Sour cream - 300 g;
  • 1 spoon of lemon juice.

Step by step cooking pancakes:

  1. Butter must be melted.
  2. Beat eggs, add milk and butter to them.
  3. Then slowly add the sifted flour, stirring at the same time. Make sure there are no lumps.
  4. Set the dough aside for half an hour, and when it stands, add chopped greens to it.

Making the stuffing:

  1. We clean the fish from the skin and remove all the bones (it is convenient to do this with tweezers). Then finely chop it.
  2. Cucumber must be peeled and finely chopped.
  3. Mix sour cream with salmon, cucumber and lemon juice. Salt and pepper the filling to taste.

Put the filling on the pancake and roll into a roll. Cut into portions.

  3. Add vegetable oil and gradually stir in the flour.
  4. We get a liquid dough for pancakes.
  5. Cooking yellow pancakes. Add salt and sugar to the yolks. Whisk well.
  6. Add flour and vegetable oil.
  7. Knead the dough for yellow pancakes.
  8. Fry pancakes in a pan.
  9. We do the same with yellow and white pancakes.
  10. We wash the chicken liver and cut into pieces. Dip with paper towel.
  11. We clean and wash the onion.
  12. Fry the liver in vegetable oil. Add salt and pepper to taste. You can add your favorite herbs and spices.
  13. Add the onion to the liver and fry until tender.
  14. Grind the liver in a blender, add mayonnaise to taste.
  15. Now let's start assembling our pancake roll. Place the yellow pancake on a plate.
  16. Lubricate with chicken liver filling.
  17. Cover with a light pancake.
  18. Grease with filling again.
  19. Repeat the process until you run out of pancakes and toppings. We roll pancakes with stuffing.
